Soondubu Jjigae!

I was fortunate enough to live in Daegu, Korea for a short time when I was younger. Among the many, MANY things I loved about my time in Korea one of the foremost was the food. All of the small side dishes, spice that doesn't burn my tongue off, green tea more readily available than water....I do admit that I don't miss the smell of kimchi permeating large swaths of the city.

Strangely enough one of my favorite Korean dishes is one I never had while in Korea - soondubu jjigae. This tofu soup can be served with whatever protein you would like and (assuming you have anchovy stock on hand) can be made very quickly. Despite my love of soondubu I haven't ever tried my hand...until now! Thanks to a great new cookbook - Koreatown - from my mother-in-law I was finally able to take a shot and the results were wonderful!! Even my four legged troublemaker, Khadgar, seemed jealous. (To be fair he is jealous of any food that isn't in his mouth.)
