Salt-Baked Leg of Lamb : Part 1

I received a cookbook for Christmas a couple of years ago from the great Philadelphia restaurant, Zahav. If you don't have this cookbook I highly recommend picking it up immediately - the hummus recipes alone justify the purchase :) This time around I decided to move away from tahini and try my head at a salt-baked leg of lamb. The ingredients needed aren't the easiest to find so plan ahead (unlike me) or be prepared to rely on the kindness of awesome people...

And here is the hero of the day with the spices in question! Christy was awesome.

Once I got home with my new found treasures I began the prep process. My wonderful husband was nice enough to take some photos during the process.

Now the leg is resting comfortably in the fridge and come tomorrow evening we'll be moving onto phase two of the process. I've got my dried roses ready to go and a couple boxes of kosher salt on stand by. Stay tuned....
