This recipe is phenomenal!!!!! It's definitely messy and takes some preparation but holy moley is it worth it! I'm going to give it another try in the coming months and video record the process - As of now I would definitely recommend having an accurate/quality meat thermometer to assuage any concerns about over-cooking.
