Peanut Butter Chip Chocolate Cookie and Lemon Bars

I'm lucky that I have many eager office mates to help deal with the scores of baked goods from my many food experiments. Last week I tried my hand at several types of bar cookies and these two seemed to be the faves. The first is an adaptation of a Reese's peanut butter chip chocolate cookie recipe - I cooked them in a jelly roll pan for a tad longer than the recipe called for. The next were something I made just to use some of the lemons I had in the kitchen - lemon bars. I increased the amount of fresh squeezed lemon juice to a little over 2/3 cup - I also put a dash of salt into the crust mix and dusted the finished bars with confectioners sugar.
